Apple juice is a juice made by mashing and pressing an apple. The resulting extruded juice may be further processed by enzymatic and centrifugal clarification to remove starch and pectin. It keeps the fine particles in suspension and then pasteurized for packaging in glass, metal, or aseptic processing system containers, or further treated by dehydration processes.

In India, the apple is one of the important fruit crops cultivated in temperate areas and has huge potential for value addition and entrepreneurship development. In India, 20–30% of apple fruits are spoiled due to improper handling, transportation, and processing; therefore, processing and value addition are extremely needed.
